Ingredients (12 loaves):
- 600 g Flour “00”
- 300 g tepid Water
- 1 cube of fresh Fresh Yeast (25 g)
- 1 teaspoons Salt
- 1 tablespoon Malt Diastatic
- 2 tablespoons Oil
- 1 pinch of Sugar
Dissolve yeast in tepid water with sugar. In planetary put the flour and malt and start to mix at low speed. Start adding the water a little at a time, until it is finished. Increase the speed a little. Now add the salt and the oil little by little. Obtained a homogeneous mixture, put it to rise for 3 hours at room temperature, or in the oven with the light on.
Place a sheet of baking paper on baking pan and sprinkle with the flour. Spend three hours, divide the dough into loaves, and place them in the pan and let the cuts cross on all of it. Cover with a kitchen towel and let rise for 1 1/2 hours. After the leavening, bake for 25 minutes at 200 ° C.
