Carrot Cake

 

Torta di Carote

Ingredients (12 portions):

  • 100g Flour
  • 100g Sugar
  • 4 Eggs
  • 200g peeled Almonds
  • 200g of grated Carrots
  • 1 teaspoon of Baking Powder
  • 3 tablespoons hot Water
  • 5 gA little Butter
  • 1 pinch of Salt
  • Icing sugar to taste

Beat the egg yolks with the sugar until they become creamy. Mix the carrots with the flour and a pinch of salt. Sift the whole thing, and then add the flour a little at a time to the eggs. Add the finely chopped almonds and three tablespoons of hot water. Whip the egg whites. Add the yeast, stir and add a little at a time the egg whites. Buttering the baking tin,  pour the mixture and bake for 45 minutes at 170 degrees. Once cooled, if you want to sprinkle with powdered sugar.
