Today I propose a quick recipe, than to do in a short time, if you are in a hurry, or if you do not really want to cook ..;) The result is very tasty!
Ingredients (Serves 2):
- 250 g Rice
- 1- 1/2 Leek
- 100g of Bacon
- 1 cup Vegetable Broth
- 3 tablespoons Heavy Cream or Greek yogurt
- Parmesan cheese or other cheese to taste (Grana, pecorino or ricotta salata)
Being a quick recipe I put the rice to cook separately. After the rice I deal with wash and finely chop the leek. Cut the bacon into match and put in a pan heat by melting two knobs of butter, once I melted put the ports to brown. When they start to take a nice deep green color add the bacon. When they are browned, add a glass of vegetable broth down with fire and I cook. Once the rice is cooked, drain and add the cream with leeks, stir I cook for a few minutes and if you do not need salt, add just a pinch of pepper, and then the rice. Stir well and add the Parmesan cheese … and the dish is ready!
